Claytonia sibirica, also known as Siberian spring beauty or pink purslane. This is a perennial version of winter purslane or miner’s lettuce. It has pretty pink flowers and succulent leaves which have a slight beetroot flavour. A pleasant addition to salads but can also be lightly cooked. It is usually evergreen (although the leaves may be small during the coldest part of winter) and forms a useful low (to about 30cm in summer) self-seeding ground-cover around taller plants.
