Here are some of the dishes we’ve had using perennial vegetables in July. (For neatness I’ve presented them day by day for a week – but really we’ve eaten these at various times over the course of the month).
Monday – Warm mallow salad (khoubiza)
Tuesday – Braised vegetables with sorrel
Wednesday – Watercress, almond butter and tomato sandwiches
Thursday – Greek artichoke and lemon stew
Friday – Watercress soup
Saturday – Hablitzia, purple tree collard and Welsh onion pizza
Sunday – Daylily, radish pod and tofu stir-fry (mid-cooking)
