Here are some of the dishes we’ve had using perennial vegetables in December. (For neatness I’ve presented them day by day for a week – but really we’ve eaten these at various times over the course of the month).
Monday – Marsh woundwort tubers and mushrooms on bagel
Tuesday – Oca, radicchio and toasted hazelnut salad
Wednesday – Duck potato and perennial leek soup
Thursday – Lacto-fermented Taunton Deane kale (not actually tasted this one yet)
Friday – Skirret, chestnut and radicchio pies
Saturday – Roast scorzonera and oca with wild garlic pesto
Sunday – Sorrel and raisin mince pies
